Some days you just want chicken, but you want it a little different on your plate. This recipe is so good you can eat it by its self, but you’ll want to put it on a bed of greens or in a sandwich. It’s simple and tasty and stores well for a few days. I’m not big on crunching celery or onion so I use celery seed and onion powder instead, but if you like the crunch, definitely use the onion and celery. Just use your leftover chicken from the night before for this one. The recipe will serve two. Here’s what you need to make this yummy chicken salad.
1 Cup of Chopped or Shredded Chicken
¼ Teaspoon Celery Seed (Can use 1 Celery Stalk if you want that crunch in each bite)
½ Teaspoon Onion Powder (Can use One Small Fresh Onion if you want the Crunch)
1 Teaspoon of Chopped Dill
¼ Cup of Mayo
1 Small Lemon (Zest and the juice)
¼ Teaspoon of Salt
¼ Teaspoon of Sugar
¼ Teaspoon Black Pepper
1. Chop or shred chicken in a bowl.
2. Add celery seed or chop and add celery stalk the bowl
3. Add onion powder or chop and fresh onion to bowl
4. Finely chop dill and put in bowl
5. Mayo goes in next
6. Zest lemon into bowl and squeeze juice from half lemon in with other ingredients
7. Put sugar into bowl
8. Sprinkle in salt
9. Add pepper
Mix everything in bowl very well until all ingredients are coated in mayo and blended well together. That’s it. It’s that simple. Grab a couple slices of your favorite bread or your favorite roll and put a generous amount of mixture on your bread and enjoy. A bed of greens is a great landing spot for this chicken salad if you’re trying to avoid bread. This is a great recipe for a quick meal and it is easy to make.
