Eat this one as a side, or serve a whole plate full as a meal! You’ll make it over and over and twist it every time because it’s easy to make this one your own. It’s pasta, veggies, and an easy to make dressing (not to mention that you can add meat to kick it up and make it well-rounded meal). Here’s what you need:

1 Large Bowl and one Small Bowl

2 Cups Cooked Pasta (Three color pasta adds a pop of color)

1/4 Cup Red Bell Pepper Chopped

Zest and Juice of 1 Medium Lemon

1/4 Cup Black Olives (You can use green or mix if you’d like)

1/2 Half Cup of Cherry Tomatoes Cut in Halves

1/4 Cup Banana Peppers Chopped (Reserve a few whole for garnishing)

1/2 Cup Grated Parmesan Cheese

For the dressing:

2 Tablespoons Mayo

3 Tablespoons Liquid From Banana Peppers

1 Tablespoon Italian Dressing

1 Teaspoon Onion Powder

1/2 Teaspoon Garlic Powder

1/2 Teaspoon Salt

1/4 Teaspoon Celery Seed

1/4 Teaspoon Italian Seasoning

Black Pepper to Taste (Red Pepper Flakes if you’d ‘like)

Let’s Go:

1. Combine all dressing ingredients in a small bowl and mix well. Set to the side and let the flavors blend)

2. Chop bell peppers and banana peppers and place in big bowl

3. Zest Lemon and squeeze juice. Add both to the big bowl

4. Add Cherry Tomatoes, Olives, And Tomatoes to big bowl.

5. Mix together the ingredients in the big bowl

6. Mix Pasta in with other ingredients in the big bowl

7. Mix half Parmesan Cheese into big bowl.


Put it all together by adding the dressing from the small bowl into the large bowl. Mix Well. Garnish with the rest of the cheese, banana peppers, olives, and a few tomatoes. Chill for at least an hour and serve. You can make this a day ahead and leave in the fridge…even better because the flavors get more time to electrify each other! To take it up to main dish status, add you favorite protein. Chicken and fish are great in this one. That’s it! Enjoy!
